每片茶叶中的传统

2025 年四月初,我前往台湾南投山区的鹿谷乡,清晨的薄雾仍轻覆茶园。林家在这片中海拔坡地耕作已三代,在 Mt. Dòng Dǐng 的注视下,摘取娇嫩的青心乌龙茶种。今年春茶的收成格外优异 — 凉爽的夜晚与和煦的阳光孕育出含糖量高的茶芽,甚至在焙火前就能感受到那份甜润。

在鲜叶经过萎凋、轻度做菁并揉捻成紧结的球状后,焙茶师傅开始他细心的工序。他用竹篮炭火慢焙茶叶两星期,通过感觉湿度与蒸气来调整火候。我坐在木凳上,每天清晨以小耳勺采样品饮,看着茶叶从青涩草绿蜕变为镶金边的珍宝。
