方婷在安溪山区寻找现代经典

多年来,方婷始终回到福建南部的安溪县,被铁观音纷繁的香气所吸引。今春,她在西坪待了三周,这个村庄以高山茶园著称,能捕捉来自海岸的海雾。她与一个家族经营的合作社紧密合作,全程跟进了现代清制风格的每个环节 — 这种技术在1990年代开创,通过缩短氧化时间、降低杀青温度,锁住茶叶的天然花香。

方婷审评了十几批茶样,寻找一款既能绽放鲜明香气,又适合日常饮用的茶。多数茶款都不错,但有一款格外突出:来自海拔600公尺的山坡,砂岩丰富的土壤与晨雾延缓了茶芽生长。茶芽在膨大至香气顶峰时以手工采摘,接着轻柔揉捻、炒青,以固定鲜绿的色泽。揉捻后低温烘干,保留了贯穿每一泡的兰花主调。
