方婷在安溪山區尋找現代經典

多年來,方婷始終回到福建南部的安溪縣,被鐵觀音紛繁的香氣所吸引。今春,她在西坪待了三週,這個村莊以高山茶園著稱,能捕捉來自海岸的海霧。她與一個家族經營的合作社緊密合作,全程跟進了現代清製風格的每個環節 — 這種技術在1990年代開創,透過縮短氧化時間、降低殺青溫度,鎖住茶葉的天然花香。

方婷審評了十幾批茶樣,尋找一款既能綻放鮮明香氣,又適合日常飲用的茶。多數茶款都不錯,但有一款格外突出:來自海拔600公尺的山坡,砂岩豐富的土壤與晨霧延緩了茶芽生長。茶芽在膨大至香氣頂峰時以手工採摘,接著輕柔揉捻、炒青,以固定鮮綠的色澤。揉捻後低溫烘乾,保留了貫穿每一泡的蘭花主調。
