Fang Ting 重返炭焙

2025 年初春,Fang Ting 前往安溪县西坪镇郊外的一小块家庭茶园,那里李家四代人以荔枝炭焙铁观音长达四代之久。当市场纷纷转向高海拔花香青茶风格时,李家依然坚守需要耐心的中焙火。他们将采摘的茶叶摊放在竹筛上缓慢阴干凋萎,再以布巾手工揉捻,静置过夜。焙火则在小型砖窑中进行,不断翻动以避免焦灼。

Fang Ting 品鉴了三种焙火程度,选中 28 小时的批量——火功足以加深茶汤厚度,却不至于盖过兰花香。她注意到茶汤的骨干:来自山坡红土的矿物感,被长时间温火柔化。这让她想起曾在河南茶圈遇到的传统铁观音,焙火韵味备受珍视。

回到审评桌,她与李家合作分离出最稳定的批量,确保焙火均匀且香气丰富。成果是一款衔接时代的茶——既有安溪知名品种的清透,又有真正炭焙的温润。这批茶限量 30 公斤,由 Fang Ting 亲自包装。
