西湖的五日之窗

在 2026 年初春,Zhou Xiang 再次前往西湖的核心產區,這裡對龍井的血統保護得十分嚴格。在一座不到兩公頃的家族茶園中,茶樹 — 種植的是龍井43號 — 剛剛冒出第一批嫩芽。真正的明前採摘時機非常短暫:今年,最佳時機與即將稀釋茶葉風味的降雨之間僅僅相隔五天。Zhou Xiang 是湖南出身的專家,數十年來專精於綠茶、紅茶和黃茶的製作,他在產區內杯測了超過 30 批茶樣後才選中這一批。他直接與一位第四代製茶師合作,後者仍以手工方式分批炒製,遵循一套涵蓋萎凋、多次炒製、以及獨特的壓輥工序的十步流程,將每片葉子壓扁成為標誌性的雀舌形狀。用 Zhou Xiang 的話來說,這批茶的與眾不同之處在於「極其清晰的栗子香,以及一股溫和的鮮味骨幹,通常只有最頂級的群體種才具備。」每個 50 克茶袋都反映出那短短五天的採收 — 一個以精湛技術和對傳統的深厚敬意捕捉到的春日瞬間。
