来自君山岛 —— 湖与传说的茶

四月初,当薄雾仍缭绕在洞庭湖面时,君山岛上的嫩芽已可采摘。这座面积不足一平方公里的小岛,正是最稀有黄茶 —— Jūnshān Yínzhēn 的发源地。这里,潮湿的湖风、深厚的冲积土壤,加上精细的人工栽培,孕育出一款极尽精致的茶。

我们的高级专家周香,湖南本地人,已有十多年每年春天造访君山。这批茶,她与一家家庭茶农合作,他们那片成熟茶树的小茶园,每年仅能产出几公斤纯芽茶。茶芽在雨前采摘,仍紧密卷曲,处理极其小心。经萎凋及轻柔的锅炒以固定氧化后,进行 mēn huáng —— 这道标志性的闷黄工序,是将温湿的叶子轻轻包裹在布料中,让缓慢的酶促转化软化绿茶的涩味,并创建浓郁的坚果甜香。
