來自君山島 —— 湖與傳說的茶

四月初,當薄霧仍繚繞在洞庭湖面時,君山島上的嫩芽已可採摘。這座面積不足一平方公里的小島,正是最稀有黃茶 —— Jūnshān Yínzhēn 的發源地。這裡,潮濕的湖風、深厚的沖積土壤,加上精細的人工栽培,孕育出一款極盡精緻的茶。

我們的高級專家周香,湖南本地人,已有十多年每年春天造訪君山。這批茶,她與一家家庭茶農合作,他們那片成熟茶樹的小茶園,每年僅能產出幾公斤純芽茶。茶芽在雨前採摘,仍緊密捲曲,處理極其小心。經萎凋及輕柔的鍋炒以固定氧化後,進行 mēn huáng —— 這道標誌性的悶黃工序,是將溫濕的葉子輕輕包裹在布料中,讓緩慢的酶促轉化軟化綠茶的澀味,並建立濃郁的堅果甜香。

Silvery buds yielding a mellow, sweet infusion with steamed chestnut, lily, and a whisper of smokiness.
