He worked directly with a small family farm whose men huang — the slow, cloth‑wrapped yellowing step — has been passed down through four generations. Harvesting only the plumpest single buds in late March, the family monitors temperature and moisture over several days, allowing the leaf’s chlorophyll to gently break down and its sweetness to deepen. The result is a yellow tea that sidesteps the green‑tea grassy edge while preserving an ethereal lightness.
